Ingredients for 4 servings:

  • 450 g mashed potatoes from the previous day
  • 300 g white cabbage from the previous day (or other varieties such as savoy cabbage, etc.)
  • 1 onion(s), chopped
  • e.g. bacon, diced
  • butter
  • salt and pepper
  • n. B. Egg(s) for frying

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

An English recipe for using leftovers

Preheat a large frying pan. Fry the onions and bacon in a little butter. Season with salt and pepper. Add the mashed potatoes and cabbage and mix well. Now there are two variations: My mother stirs and mixes everything; I prefer to make a giant pancake. This involves smoothing the mixture, frying it on one side until golden brown, and flipping it over using a large plate. Brown the other side the same way. Then cut into pieces and serve with a fried egg. The recipe is called Bubble ‘n’ Squeak because that’s exactly what happens when you fry it in a pan.
