Spicy vegetable rice

Ingredients for 4 servings:

  • 1 cup rice (long grain)
  • 2 tbsp olive oil
  • 1 onion(s)
  • 30 g bacon
  • 1 tsp broth, granulated
  • 1 tsp, heaped curry powder
  • 1 pepper, fresh
  • 1 clove(s) garlic
  • ½ cup peas, frozen
  • 1 carrot(s), diced

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the bacon and fry it with the onions in olive oil. Remove the pan from the heat and add the garlic, chili peppers, curry powder, stock granules, and rice. Return the pan to the heat and briefly toast the rice and spices. Deglaze with 2 cups of water, cover, and simmer for 12 minutes. Then add the peas and carrots for 5 minutes. You can add almost any vegetables, including mushrooms. Tastes great with pan-fried or grilled chicken.
