Spinach and salmon roll

Ingredients for 4 servings:

  • 1 package of spinach
  • 3 eggs
  • 1 package of salmon (smoked salmon)
  • 2 cups cream cheese
  • 50 ml cream

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes

First, thaw the spinach, then set the pan aside and wait until the spinach has cooled. After about 1 hour, add the 3 eggs to the spinach and mix well. Line a baking tray with baking paper and spread the spinach mixture on it to a depth of about 1.5 cm. Then place the tray in the oven at 180 degrees for about 20 minutes. Remove the tray from the oven and let it cool. While the spinach is cooling, put the two packages of cream cheese in a bowl and mix with the cream. The mixture should not be too runny; it must remain spreadable. Once the spinach has cooled, tip it onto aluminum foil. Then spread the cream cheese over the spinach and then arrange the salmon slices on top of the cream cheese. Lift the mixture and roll it up (like a lemon roll). Then wrap it tightly in aluminum foil and refrigerate. Cut into slices to serve.
