Ingredients for 2 servings:
- 450 g spinach, frozen, thawed, drained in a sieve
- 1 onion(s), peeled, chopped
- 1 clove(s) garlic, peeled, chopped
- salt and pepper
- 75 g cheese (Gouda), grated
- 4 eggs, of which the egg whites
- salt and pepper
- 2 tbsp mayonnaise
- 4 eggs, including the yolk
- butter
- nutmeg
- Sugar
- lemon juice
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Sauté the onion and garlic in the heated fat, add the spinach, and bring to a boil over low heat. Season with salt, pepper, sugar, nutmeg, and lemon juice, remove from the heat, and let cool. Stir half of the cheese into the spinach and pour into a greased baking dish. Beat the egg whites until stiff, season with salt and pepper, fold in the remaining cheese and mayonnaise, and spread over the spinach. Use a spoon to make four indentations in the egg whites and drop the yolk into them. Bake in a preheated oven at 200°C (400°F) for about 10 to 15 minutes.
