Spinach casserole with puff pastry

Ingredients for 3 servings:

  • 2 sheets of puff pastry (round or square, depending on the baking dish)
  • 400 g leaf spinach (frozen)
  • 250 g feta cheese
  • 1 cup whipped cream
  • 2 eggs
  • 200 g cheese (Emmental, Gouda), grated
  • 1 clove(s) garlic
  • ½ tsp salt
  • ½ tsp pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Line a sheet of puff pastry in the baking dish and add the spinach. Finely dice the feta and sprinkle it over the spinach. Whisk the eggs and mix with the cream. Add salt, pepper, and garlic to taste. Stir about 100g of the grated cheese into the cream and egg mixture. Spread the mixture on top of the spinach and cover with the second layer of puff pastry. Sprinkle with the remaining grated cheese. Bake in the oven at 180°C for about 30-40 minutes. It tastes great on its own, but also as a side dish to roasted meat.
