Turkey – Spinach – Roulades

Ingredients for 4 servings:

  • 4 turkey cutlets, evenly sliced
  • salt and pepper
  • 1 pkt. leaf spinach, frozen
  • 100 g smoked ham
  • 1 tbsp butter
  • 1 tbsp oil
  • 1 jar white wine
  • 1 cup of cream
  • 1 tsp cornstarch
  • 250 ml vegetable stock

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Carefully pound the meat into roulades under foil, being careful not to damage the meat fibers. Season with salt and pepper. Top the roulades with the squeezed-out spinach and ham, roll them up, and tie them. Heat the butter and oil in a saucepan and quickly sear the meat on both sides. Deglaze with the wine. Add 250 ml of vegetable stock. Now place in the oven at around 150 °C for around 35-40 minutes. Remove the meat and pour the cream into the sauce. Season the sauce with salt and pepper and thicken with a little stirred cornstarch. Return the meat to the sauce. Serve with potato gratin and salad.
