Spinach mince nests

Ingredients for 2 servings:

  • 1 onion(s)
  • 1 garlic clove(s)
  • 500 g minced meat of your choice
  • 450 g creamed spinach
  • 2 eggs
  • e.g. salt and pepper
  • 60 g Emmental cheese, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Low-carb

Finely chop the onion and mince the garlic. Mix both with the ground beef and season with salt and pepper. Divide the ground beef, place each on a baking sheet lined with baking paper, and form two “nests” out of each. The edges should be stable and high enough. The bottom should not have any holes. Meanwhile, thaw the spinach in a pot or warm it until lukewarm. Season with salt and pepper and add it to the ground beef nest. Make two wells and break in the eggs. Sprinkle the edges with cheese. Bake in a preheated oven at 180°C (top/bottom heat) for approximately 30-45 minutes. Serve hot.
