Spinach pasta salad

Ingredients for 2 servings:

  • 250 g pasta, e.g. farfalle
  • 100 g cherry tomatoes
  • 200 g baby spinach
  • 1 half onion(s)
  • Garlic, optional
  • 2 tbsp pine nuts or salad seed mix
  • 80 g parsley
  • 1 tsp mustard
  • 1 tsp honey
  • some salt and pepper
  • herbal salt
  • 3 tbsp water
  • 3 tbsp oil

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 35 minutes

Quick, easy and vegetarian

Cook the pasta according to the package instructions. Toast the seeds in a dry pan. Wash the tomatoes, spinach, and parsley. Quarter the tomatoes, and finely chop the spinach, parsley, and onions. Place everything in a bowl and add the seeds. Drain the pasta and add it to the bowl. Mix the oil, water, mustard, spices, and honey together well, then pour over the salad. Mix everything well and let it sit in the refrigerator for a few hours. Season to taste before serving.
