Ingredients for 4 servings:
- 300 g fresh leaf spinach
- 1 garlic clove(s)
- 1 large lime(s) or lemon, untreated
- 1 avocado(s)
- 2 tbsp walnuts, chopped
- 75 g breakfast bacon, thin slices
- 1 tbsp olive oil
- 3 tbsp oil (nut oil)
- 1 ½ tbsp mustard, medium hot
- salt and pepper
- Sugar
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Sort the spinach, wash it, and drain well. Finely chop the garlic. Wash the lime in hot water, grate some of the zest, and squeeze out the juice. Halve the avocado, remove the pit, peel both halves, and cut into wedges or cubes. Drizzle with 1 tablespoon of lime juice. Roughly chop the walnuts and toast them in a pan without fat. Cut the bacon into slightly wider strips. Fry them without fat until crispy. Mix the garlic, lime juice, olive oil, and nut oil to make the dressing and season with lime zest, salt, pepper, mustard, and sugar. Toss the spinach and avocado with the dressing, sprinkle with nuts and bacon, and serve with white bread. The nut oil enhances the flavor of the walnuts in the salad. You can also make the dressing using just olive oil or sunflower oil.
