Spinach spaetzle

Ingredients for 2 servings:

  • 150 g flour
  • 150 g spinach, young, chopped, frozen
  • 1 m.-sized egg(s)
  • 5 g salt
  • e.g. ground nutmeg

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

Mix flour, egg, salt, nutmeg, and the thawed spinach into a smooth (but not too soft) dough. Using a spaetzle slicer, slice the dough in batches into plenty of boiling salted water. Cook for 5 minutes, remove from the pan, and refresh with cold water. If you like, you can also toss the spaetzle in hot butter with chopped and roasted garlic. This side dish goes very well with meat dishes with cream sauce.
