Ingredients for 1 servings:

  • 1.2 kg fig(s), fresh ripe (cleaned 1 kg net)
  • 350 ml red wine
  • 1 kg gelling sugar, 1 to 1
  • 1 lemon(s), the juice

Instructions

Working time approx. 45 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 30 minutes; Total time approx. 13 hours 15 minutes

from fresh figs

Remove the stems and hard blossom ends from the figs and chop very finely. Place them in a saucepan with the red wine and lemon juice and heat. Boil for about 15 minutes, then let cool, preferably overnight. If the fig pieces are still very firm the next morning, chop them up a little more with a hand blender. Continue according to the instructions on the preserving sugar packet. Test the setting and let it cook a little longer if necessary. Pour into twist-off jars while still hot and seal immediately.
