Spinach tart in puff pastry

Ingredients for 1 servings:

  • 1 pack of puff pastry, frozen
  • 900 g spinach, young, frozen
  • 50 g bacon, streaky, diced
  • 1 onion(s), diced
  • 5 eggs
  • 1 pack of feta cheese or white cheese
  • 250 ml sour cream
  • 2 tbsp cornstarch
  • 200 g cheese, grated
  • Salt
  • pepper
  • nutmeg

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Thaw frozen puff pastry. Prepare spinach according to package instructions. Fry bacon, then sauté in a pan with diced onion. Whisk together eggs, sour cream, cornstarch, nutmeg, salt, and pepper in a bowl. Line a 26 cm cake tin with the puff pastry, creating a high rim. Pierce the base several times and spread the spinach, grated cheese, and feta on top. Fill with the egg mixture. Arrange additional puff pastry pieces on the tart, sealing them together well to prevent holes from forming and allowing the contents to ooze out. Bake in a preheated oven at 225°C on the bottom rack for about 15 minutes, then bake at 180°C on the middle rack for another 25 minutes.
