Spinach waffle burger

Ingredients for 4 servings:

  • 120 g leaf spinach
  • 1 avocado(s)
  • 200 g spelt flour
  • 2 tbsp cornstarch
  • 20 ml water
  • ½ tsp baking powder
  • 20 g sprouts
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 45 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 12 minutes

Vegan

Wash the spinach leaves and let them drain (you can also use frozen spinach, but you have to let it thaw a little first). Puree the leaves and water with a hand blender. Mix the flour, baking powder, starch, salt and pepper and stir into the spinach water to form a batter. Let it swell a little. Using a tablespoon, add some batter to a hot pan with oil, shape it into a burger shape with the spoon and fry for a few minutes on each side. Cut the avocado open, remove the pit, scoop out the flesh with a spoon and mash it into a mush. Stack the burgers on top of each other in a tower and spread the avocado cream between them, garnishing with sprouts. Tip: You can also make the batter in a waffle iron. It was so good there was almost no more left.
