Spiral vegetables with chicken breast

Ingredients for 1 servings:

  • 100 g zucchini
  • 100 g carrot(s)
  • 100 g radish(s)
  • 100 g chicken breast fillet(s)
  • 100 g konjac noodles
  • 2 spring onions
  • 1 red chili pepper(s) or chili flakes
  • 1 tbsp soy sauce
  • 1 tsp oil
  • salt and pepper
  • coriander

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Wash the carrots and radish, peel if necessary, and cut into thin strips using a vegetable peeler. Wash the zucchini and cut into endless spirals. Cut the chicken breast fillet into small slices. Cut the chili and spring onion into small rings. Prepare the noodles according to the package instructions. Brown the chicken in a nonstick pan with 1 teaspoon of oil, add the vegetables and chili, and cook until crisp. Then stir in the soy sauce and fold in the noodles. Season to taste and enjoy.
