Ingredients for 6 servings:

  • 3 egg yolks
  • 3 egg whites
  • 1 egg(s)
  • 1 packet of vanilla sugar
  • 200 g sugar
  • 200 g flour
  • 1 tsp baking powder
  • butter
  • powdered sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Bunnies made from fine sponge cake – an old family tradition for Easter

Preheat the oven to 200°C (top and bottom heat). Beat 3 egg whites until stiff peaks form. Beat 3 egg yolks and 1 whole egg with 200g sugar and vanilla sugar for at least five minutes until frothy. Sift in the flour and baking powder, stirring constantly to form a very firm batter. Finally, carefully fold in the egg whites. The batter should form a creamy batter. Line a baking tray with baking paper and grease with butter. Place well-greased bunny molds on top. Pour the batter evenly into the molds and place them on the lowest rack in the oven. Bake at 200°C (top and bottom heat) until the bunnies are golden yellow. Depending on the oven, this will take about 15-20 minutes. The bunnies must not turn brown! Remove the bunnies from the molds with a knife and let them cool on a wire rack. Dust the cooled bunnies with powdered sugar. Then place the bunnies in small bags and tie them tightly with a ribbon to prevent them from drying out.
