Ingredients for 4 servings:
- 1 medium-sized onion(s), finely chopped
- 2 cloves garlic, finely chopped
- 70 g carrot(s), cut into small cubes
- 50 g celery, sliced
- 50 g bacon
- 450 g minced meat (very lean ground beef or tartar)
- 1 can of chopped tomatoes (411g)
- 125 ml red wine
- 2 tbsp tomato paste
- 1 tsp oregano, dried
- Salt and pepper, black ground
- 500g spaghetti
- Parmesan, freshly grated, to serve
- Olive oil, for frying
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes
Peel and finely chop the onion and garlic. Trim and dice the carrots. Slice the celery into fairly thin slices, then heat 1 tablespoon of olive oil in a roasting pan. Add the finely chopped bacon, fry until crispy, and then remove. Add the minced meat to the roasting pan and fry vigorously, stirring occasionally. Add the onions and garlic and fry briefly. Deglaze with the can of tomatoes and red wine, and stir in the tomato paste. Add the bacon, 1-2 teaspoons of oregano, and season with salt and black pepper. Simmer with the lid on for about 30 minutes. Meanwhile, cook the spaghetti or other pasta until al dente. Transfer to a large bowl, spoon the meat sauce over it, sprinkle with Parmesan cheese, and serve.
