Sponge cake with berries

Ingredients for 1 servings:

  • 5 eggs
  • 130 g sugar
  • 170 g flour
  • 1 pinch of baking powder
  • 1 tbsp vanilla sugar
  • 1 pinch of salt
  • 350 g crème fraîche
  • 100 g sugar
  • 400 g berries, mixed

Instructions

Working time approx. 45 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes

Preheat oven to 200°C (top/bottom heat). Separate the eggs carefully. Beat the egg whites with a pinch of salt until stiff peaks form. Beat the egg yolks and sugar until creamy, then pour the egg yolk and sugar mixture onto the egg whites and fold in. Mix the flour and baking powder and carefully sift them onto the batter mixture. Mix all ingredients with a spoon. Line a springform pan with baking paper. Pour in the batter and place in the preheated oven for 20-25 minutes – do not open the oven door. Then place it on a wire rack and halve it to create a smooth surface. Mix the crème fraîche with the sugar and spread it onto the sponge base. Decorate with berries or fruit of your choice. Tip: any cut-off or leftover cake base can be frozen for next time.
