Ingredients for 4 servings:

  • 1 pointed pepper, red
  • 3 tomatoes
  • 6 stalks parsley, flat
  • 1 onion(s)
  • 1 handful of walnuts
  • 3 sprigs of mint, e.g. Nana mint
  • 1 lemon(s)
  • 2 tbsp pomegranate syrup (nar eksi), from the Turkish supermarket
  • tsp cumin powder
  • 1 garlic clove(s)
  • ½ tsp salt
  • some pepper
  • some Pul Biber
  • 0.33 tsp nutmeg, freshly grated
  • 2 tbsp olive oil

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Total time approx. 25 minutes

Chop the salad ingredients and place them in a bowl. Set aside half of the nuts. Mix together nar eksi (pomegranate syrup), olive oil, garlic, lemon juice, and spices to make a dressing and drizzle over the salad. Mix thoroughly. Let it sit in the refrigerator for 10-15 minutes to allow everything to combine. Garnish with the remaining walnuts before serving.
