Spread: Crema Di Gorgonzola (Friuli)

  • 200 g Gorgonzola
  • 100 g Mascarpone
  • 1 piece Fresh onion
  • 1 piece Spring onion
  • 2 piece Anchovy fillets in brine
  • 1 tablespoon Capers
  • 1 pinch Caraway powder
  • 0,5 teaspoon Sweet paprika powder
  • 0,5 teaspoon Mustard medium hot
  • 0,5 teaspoon Sugar
  • Salt and pepper
  1. Peel and chop the onion and spring onion.
  2. Chop the gorgonzola or mash it with a galbel and stir with the onions.
  3. Puree the mascarpone with the spices, anchovy fillets, mustard and capers and mix with the Gorgonzola. Season to taste with salt, pepper and a pinch of sugar.
  4. This cream is a hit with fresh white bread and leftovers are excellent for making sauces.
