Spring pan with spinach, mushrooms and cherry tomatoes

Ingredients for 2 servings:

  • 10 cherry tomatoes
  • 6 mushrooms, brown or white
  • 1 avocado(s)
  • 200 g spinach
  • 4 garlic cloves
  • Herbs to taste, fresh
  • olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Slice the garlic cloves and fry them briefly with the herbs in olive oil until light yellow. Quarter the tomatoes and sauté them briefly. Then remove the herbs and set the garlic tomatoes aside. Chop the mushrooms and fry them, then chop the spinach and add it. Season with salt and pepper and continue frying until the spinach has wilted. Stir in the garlic tomatoes again. Slice the avocado and add it. Serve shortly after. Serve with rice or baguette.
