Ingredients for 4 servings:

  • 100 g mung bean sprouts
  • 100 g alfalfa sprouts
  • 100 g lentil sprouts
  • 100 g cashew nuts
  • 1 large tomato(s), chopped
  • 4 spring onions, cut into rings
  • 2 tbsp olive oil
  • 1 tbsp soy sauce, dark
  • 1 tbsp lemon juice, freshly squeezed
  • 1 clove(s) garlic, pressed
  • Sea salt and black pepper, freshly ground
  • 2 tbsp garlic bread croutons

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine bean sprouts, alfalfa sprouts, lentil sprouts, cashews, tomatoes, and spring onions in a salad bowl. Mix together olive oil, soy sauce, lemon juice, and garlic, and season with salt and pepper. Pour this mixture over the salad, gently fold it in, and serve sprinkled with croutons.
