Ingredients for 2 servings:

  • 4 handfuls of spruce shoots, fresh (light green May shoots)
  • 1 liter of water
  • 1 kg sugar, brown or white
  • 1 lemon(s), the juice

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 2 hours; Total time approx. 14 hours 20 minutes

Briefly boil the May shoots with water, then let it steep overnight. The next day, strain the liquid, add the sugar and lemon juice. Simmer in an uncovered saucepan over low heat until a syrupy consistency forms (about 2 to 3 hours). Test as you would with jam! Note: Cooling will make the mixture firmer! If the syrup has become too runny, reheat it and continue to reduce. If it is too thick, add a little water and briefly bring back to a boil. Pour the syrup into jars. Use to sweeten tea and dishes, or as a spread.
