Squeezed cucumber salad

Ingredients for 3 servings:

  • 1 large cucumber(s)
  • 2 small onions, peeled and finely chopped
  • 2 cloves garlic, peeled and finely chopped
  • ¾ dl vinegar (white wine vinegar)
  • ¼ dl oil (sunflower oil)
  • some salt
  • some pepper, white
  • 1 tsp dill, fresh

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Peel the cucumber and grate thin slices into a bowl. Season well with salt and let stand, squeezing and draining the water frequently, adding more salt if necessary. Pour the vinegar into a bowl, add a little salt, and stir until the salt dissolves. Add the onions and garlic, let stand for a while, and then add the oil. Season with pepper to taste and mix well. Squeeze the cucumbers well and toss with the sauce. Sprinkle with some fresh dill.
