Starbucks Double Chocolate Muffins

Ingredients for 1 servings:

  • 80 g dark chocolate coating
  • 200 ml buttermilk
  • 2 eggs
  • 50 ml rapeseed oil
  • 1 ½ tsp vanilla extract
  • 200 g flour
  • 100 g sugar
  • 3 tsp baking powder
  • 1 ½ tsp baking soda
  • 5 tsp cocoa
  • 250 g cream cheese
  • 30 g sugar
  • 1 egg(s)
  • 1 ½ tsp vanilla extract

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 48 minutes

For the chocolate batter, dissolve the chocolate in warm buttermilk and set aside to cool. Crack the eggs and mix them with the rapeseed oil and vanilla extract. Separately, combine the flour, cocoa powder, sugar, baking powder, and baking soda and carefully stir into the wet ingredients. Finally, fold in the chocolate mixture. For the cheesecake batter, mix the cream cheese with sugar, vanilla extract, and one egg until smooth. Now simply divide the chocolate batter between the 12 muffin cups, use moistened fingers to make a well in the center of each, and spread the cream cheese mixture into the well. Bake at 180°C (top/bottom heat) for about 18 minutes. Note: Starbucks muffins can be really delicious, it’s just a shame they’re so expensive. But they’re so easy to make yourself. These moist chocolate muffins with a cream cheese fleck not only look great, they’re also incredibly delicious. When filling the baking tray, you’ll need a bit of patience and don’t be afraid to get your hands dirty with chocolate. But the result is definitely worth it and will delight you and your Starbucks friends.
