Tomato and avocado salad

Ingredients for 2 servings:

  • 4 large tomatoes
  • 2 avocados, ripe
  • 1 lime(s)
  • 3 tbsp avocado oil
  • 2 tbsp balsamic vinegar, white
  • 1 pinch(s) of oregano
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Wash the tomatoes, remove the stems, and cut into small pieces. Halve the avocado, remove the pit, scrape the flesh from the skin, and also cut into small pieces. Place both ingredients in a bowl. Wash the lime with hot water, grate the zest, and squeeze out the juice. Combine the lime zest and juice in a small bowl with the avocado oil, balsamic vinegar, salt, pepper, and a pinch of oregano and mix everything together. Add the dressing to the tomatoes and avocados in the bowl and fold in. Let the salad marinate for about 2 hours.
