Starter / Intermediate Course: Puff Pastry Tartlets with Camembert, Ham & Apple

The perfect starter / intermediate course: puff pastry tartlets with camembert, ham & apple recipe with a picture and simple step-by-step instructions.

For the filling:

  • 1 middle Carrot
  • 2 Shallots
  • 2 Discs Black Forest ham
  • 0,5 tbsp Lemon oil, alternatively vegetable oil
  • 100 g Camembert
  • 1 middle Apple
  • 1 tsp Freshly squeezed lemon juice

For the cast:

  • 100 g Creme fraiche Cheese
  • 1 tbsp Milk
  • 2 Eggs
  • 2 tbsp Freshly grated Parmesan
  • 1 tbsp Frozen herbs of Provence

Spices:

  • Salt
  • Colorful pepper from the mill
  • 1 pinch Cayenne pepper

Aside from that:

  • Some fat for the molds
  • 2 tsp Ground hazelnuts
  • 4 Tartlet forms approx. 13 cm each
  1. Let the puff pastry thaw at room temperature. Preheat the oven to 200 degrees (top and bottom heat). Clean and peel the carrot, then grate it roughly. Peel the shallots, cut in half and cut into strips. Dice the ham. Heat the oil in a pan. Fry the vegetables and ham in it until the shallots are translucent. Pepper lightly, remove from heat and let cool down a little.
  2. Cut the camembert into cubes. Peel the apple, cut out the core, dice the pulp and drizzle with the lemon juice. For the topping, whisk together the crème fraîche, milk, eggs, Parmesan and herbs. Season with salt, colored pepper and cayenne pepper.
  3. Grease the tartlet molds and sprinkle with the ground hazelnuts. Line out with the puff pastry, shape one edge and remove any protruding leftovers (I cut out small shapes from the leftovers, spread them in the middle of the tartlets and smeared with a little condensed milk).
  4. Mix the diced apple with the ham and vegetables mixture and spread on the puff pastry, then spread the Camembert cubes on top. Cover evenly with the icing. Bake in the oven for about 35 minutes, until the tartlets are golden brown in color. Take out of the oven and let rest for approx. 5 minutes. Carefully remove from the molds, arrange and serve, with a fresh salad of your choice. Have fun baking, tastes good as an intermediate course or as a starter, if z. B. Guests come :-).
