Stock: Jabuka – Applesauce

The perfect stock: jabuka – applesauce recipe with a picture and simple step-by-step instructions.

  • 3 kilogram Apple wedges – windfalls
  • 50 ml Lemon juice
  • 1 kg Sugar
  • 1 tablespoon Ground cinnamon
  • 75 ml Grappa
  • 3 piece Ground cloves
  1. Mix the sugar with the cinnamon. Put the apple wedges in a large dripping pan, drizzle with lemon juice, mix with cinnamon sugar and grappa and leave to stand overnight.
  2. Cook open in the oven at 120 degrees convection with the oven door open for about 5 hours.
  3. Puree in a blender or with a magic wand
  4. Fill into jars rinsed with hot water and boil again for approx. 2 hours at 90 degrees in the oven. To do this, place the glasses in a baking dish that is about 3 cm high with water.
  5. This puree is an excellent ingredient for cakes, pancakes, also for sauces or simply with yoghurt or quark.
