Stock: Jabuka – Applesauce

- 3 kilogram Apple wedges – windfalls
- 50 ml Lemon juice
- 1 kg Sugar
- 1 tablespoon Ground cinnamon
- 75 ml Grappa
- 3 piece Ground cloves
- Mix the sugar with the cinnamon. Put the apple wedges in a large dripping pan, drizzle with lemon juice, mix with cinnamon sugar and grappa and leave to stand overnight.
- Cook open in the oven at 120 degrees convection with the oven door open for about 5 hours.
- Puree in a blender or with a magic wand
- Fill into jars rinsed with hot water and boil again for approx. 2 hours at 90 degrees in the oven. To do this, place the glasses in a baking dish that is about 3 cm high with water.
- This puree is an excellent ingredient for cakes, pancakes, also for sauces or simply with yoghurt or quark.
