Pitting mirabelle plums: this is how it works with a knife

If Mirabelle plums are overripe or not yet ripe enough, the pit inside the fruit is difficult to remove. With the right hand and knife handles, however, this can be done well.

  1. Wash the plums and dry them well. Then take a small, sharp knife. For pitting to work well, the knife should be as sharp as possible.
  2. Set out two bowls. Put the seeds in one bowl and the plum halves in the other.
  3. Place the knife at the base of the mirabelle plum. Cut the fruit all the way around along the notch. It is best to guide the knife along the core. Separate the two plum halves by twisting them in opposite directions.
  4. The stone can fall out of the fruit by itself. If the pit is still in one-half of the fruit, lift it up a little with the tip of a knife. The core can usually be easily removed.

If you want to use the mirabelle plums to make a jam or a compote, then you have to put a large number of mirabelle plums. If this is the case, it is best to use a destoner.

  • Always follow the instructions for use that came with your stoner. The device slightly cuts the tip of the mirabelle plum and removes the core with a force. For example, you can get a combi stoner and a hand stoner in stores.
  • Put a mirabelle plum in the hand stoner, then you have to press it shut. The fruit is cut and the core pushed out.
  • The Kombinentsteiner, on the other hand, is offered for cherries and plums. You have to press a lever. The pit is pushed out of the fruit by the force applied.

A rich plum harvest has to be processed. Mirabelles can only be kept refrigerated for about two to three days. The fruits can be processed into various dishes, liqueurs, and cakes. You can also simply freeze the fruit or turn it into compote.

  • Freezing: Mirabelle plums can be frozen well. Then process the frozen plums into a plum cake. Jam can also be made from the fruit afterward.
  • Preserving: Boil the plums with sugar or turn them into plum jam.
  • Sweet Mirabelle Soup: If you would like to try something new, just cook a Mirabelle Soup. All you need is Mirabelle plums, vanilla pudding, milk, and sugar.
  • Cakes: Different kinds of cakes can also be made from mirabelle plums. Combine the fruits with other fruits, such as damsons or plums.
