Strawberry-apricot-vanilla jam

Ingredients for 1 servings:

  • 500 g strawberries
  • 500 g apricot(s)
  • 500 g gelling sugar 2:1
  • 1 vanilla pod(s)

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 55 minutes

Chop the pitted apricots and hulled strawberries into small pieces and place them in a tall saucepan. Split the vanilla pod open, scrape out the seeds, and add them. Add the empty vanilla pod as well. Mix with the preserving sugar and let it steep for 30 minutes. Remove the pod, puree the mixture, and add the pod back in. Let it simmer for about 5 minutes. If the jam is set, remove the vanilla pod with a clean fork and ladle the piping-hot jam into clean jars. Immediately close the lids.
