Ingredients for 1 servings:

  • 12 Speculoos (spiced)
  • 30 g butter
  • 400 g cream cheese
  • 140 g sugar
  • 3 m.-sized eggs
  • 6 strawberries

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Finely grind the speculatius biscuits (I place them between baking paper and roll over them with a rolling pin) and mix with the melted butter. Fill muffin cups to a height of about one centimeter and press down. The cups should be placed in a muffin tin, as the mixture is too runny. Preheat the oven to 160°C (top and bottom heat). Beat the cream cheese and sugar until light and fluffy, then add one egg at a time. Fill the muffin cups. Purée fresh or frozen strawberries and then place a small dollop of the purée in the center of each cupcake. Decorate the strawberry coating with a wooden skewer, etc. Bake for 20-30 minutes. Makes 12-13 muffin cups.
