Strawberry chutney

Ingredients for 4 servings:

  • 1 kg strawberries
  • 100 ml balsamic vinegar
  • 50 ml vinegar (red wine vinegar)
  • 150 g gelling sugar, 1:3
  • 1 bag(s) of lemon(s) – acid
  • 2 small onions
  • 1 tsp salt
  • 1 tbsp black peppercorns, roughly crushed in a mortar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with black pepper

Finely dice the onions and bring to a boil in a saucepan with both types of vinegar and the spices. After about 2-3 minutes, add the gelling sugar and the quartered strawberries, bring to a boil, and simmer for at least 3 minutes. Pour into sterilized jars and turn upside down. Shelf life: approximately 1 year.
