Strawberry Chutney

Ingredients for 1 servings:

  • 250 g strawberries
  • 1 tbsp butter
  • 2 onions
  • 150 g brown sugar
  • 1 ½ dl vinegar
  • 1 cinnamon stick(s)
  • 1 star anise
  • 1 carnation(s)
  • 10 black peppercorns
  • 1 bay leaf
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Rinse the strawberries and cut into quarters. Set aside 1/3 of the strawberries. Finely slice the two onions and sauté them with the remaining strawberries in butter until translucent. Caramelize with the brown sugar, then deglaze with the vinegar. Add the spices, including the 10 peppercorns, and slowly simmer, stirring occasionally. Mix in the remaining berries and season with salt and pepper, if desired. Transfer the chutney to a clean jar and refrigerate. It’s a perfect accompaniment to grilled meats or cheese platters.
