Strawberry crumble with pistachios

Ingredients for 6 servings:

  • 400 g strawberries
  • 50 g powdered sugar
  • 25 g almonds, ground
  • 2 tsp vanilla extract
  • 110 g flour
  • 1 tsp baking powder
  • 75 g butter
  • 100 g pistachios, shelled
  • 75 g brown sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

Preheat oven to 180°C (top and bottom heat). Wash and quarter the strawberries, then mix with the almonds, sugar, and vanilla. Place everything in a greased baking dish. To make the crumble, mix the flour and baking powder with the butter. The butter needs to be cold, and it’s easiest to do this with a mixer fitted with a dough hook. The crumble should end up looking like crumbles. Finely chop the pistachios and add them to the crumble along with the brown sugar. Sprinkle the crumble evenly over the strawberries. Place the baking dish in the oven for 30 minutes. The crumble should be golden brown with red highlights from the strawberry juice. Wait 10 minutes before serving. Crumble is often served with ice cream; vanilla, chocolate, or pistachio ice cream goes well with it.
