Ingredients for 6 servings:

  • 500 g strawberries
  • 500 g low-fat curd cheese
  • 2 tbsp, heaped sugar
  • 200 ml whipped cream
  • 2 packs of gelatin powder
  • 1 pack of cream stiffener
  • 3 tbsp Marsala
  • 1 tsp lemon juice, freshly squeezed
  • 1 tbsp pistachios

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

Wash the strawberries and pat them dry thoroughly. Set aside a few whole berries for garnish and store in the refrigerator. Roughly dice the remaining strawberries and cover and store in the refrigerator until ready to use. Beat the whipped cream with the cream stiffener until very stiff, then chill. Mix the quark, sugar, lemon juice, and Marsala together with a mixer on medium speed. Then add the gelatin and mix the cream on full speed for about 1 minute; there should be no lumps. Fold the diced strawberries into the quark mixture, then carefully fold in the whipped cream. Transfer everything to a bowl, cover, and refrigerate for about 4 hours. Before serving, scatter the chopped pistachios over the cream and decorate the cream with the whole strawberries.
