Strawberry fruit spread with coconut milk

Ingredients for 1 servings:

  • 1,100 g strawberries (prepared, weighed)
  • 400 g coconut milk, unsweetened
  • 500 g gelling sugar (3:1)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and puree the strawberries. Combine with coconut milk and gelling sugar in a large saucepan, bring to a boil while stirring, and simmer over high heat for 3 minutes. Pour into jars while still hot and seal immediately. This makes about 12 jars.
