Strawberry jam, cold stirred

Ingredients for 1 servings:

  • 500 g strawberries
  • 160 g sugar
  • 10 g apple pectin (powder)
  • 15 g lemon juice, from about 1/2 lemon

Instructions

Working time approx. 10 minutes; Rest time approx. 6 hours; Cooking/baking time approx. 20 minutes; Total time approx. 6 hours 30 minutes

Cut about half of the strawberries into small pieces. Mix in a bowl with 20g of sugar and let it draw juice for about 30 minutes. Halve the other half of the strawberries. Add 15g of lemon juice. Mix about 140g of sugar and most of the apple pectin. Reserve only about 1/2 teaspoon of pectin. After adding the strawberries, mix everything with the food processor on the lowest speed for about 15 minutes. This will practically break down the strawberry pieces. Shortly before the end of the mixing time, sprinkle the remaining pectin finely over the strawberry pieces in the bowl and mix. Let stand for 5 minutes. The juice will now thicken here too. Now mix everything by hand. Pour the chunky jam into clean, dry jars and refrigerate. The next day, you can start eating this delicious treat. If refrigerated, it will only keep for a few days.
