Strawberry Jam – Very Special with Added Fruit

  • 1 kg Strawberries

  • 2 tablespoon Lemon zest
  • 35 g Gelfix 2: 1

Preface

  1. I like pieces of fruit in the jam, but my Göga doesn’t like these mushy overcooked pieces of fruit … so a solution has to be found that works for both … so the idea came about to add small pieces of fruit only at the end of the cooking time and not these to cook more … The prerequisite for this variant is, of course, that you use perfect, flawless fresh fruit!

Preparation of fruits and sugar

  1. Wash the strawberries – let the fruits drain on a paper towel – cut off the cap of the leaves – quarter the strawberries that are cooked to make jam – the strawberries that serve as the fruit filler are cut into tiny cubes – weigh the specified amount of sugar for the jam – an additional 20 grams of sugar Mix well with 35 grams of Gelfix 2: 1 and set aside

  1. Put some high-percentage rum in the first of the clean jam jars (gives flavor and also sterilizes the jars) – shake the jar well so that the lid is well moistened – now pour the rum into the next jar etc … etc … until all glasses are moistened with rum

Put the fruits for the jam together with the sugar in a large saucepan ATTENTION: the Gelfix / sugar mixture is added later! – if you have enough time, the fruits should marinate with the sugar for at least an hour before boiling them – wash the lemon with hot water and rub the peel – squeeze out the juice – add both to the fruit in the pot – boil the jam and then finely puree with the hand blender – then the Gelfix / sugar mixture is added and boiled for 3 minutes, stirring again and again
  2. Switch off the stove (but leave the pot on the hot plate so that the jam stays nice and hot during filling) – finally add the strawberry cubes to the hot mixture, stir everything well and pour the jam straight into the glasses rinsed with rum – each Close the jar tightly immediately

Note on storage

  1. If you prepare larger quantities and are worried about the longer storage time, you can play it safe by freezing the jars … so you have very fresh strawberry jam for a long time … by the way: the freeze keeps the color and Taste perfect, as if it had just been freshly made !!! if you don’t think so, you can just try it out with a glass and then after a few months compare it with the glasses stored normally!

  1. the jam is awesome! the small strawberry pieces in the jam taste fresh and fruity and not mushy … the jam has a creamy, compact consistency due to the slightly increased amount of Gelfix and does not drip from the bread, but on the other hand is not too firm or even “rubbery” – GÖGA is fully satisfied and so am I!
