Ingredients for 1 servings:
- 3 kg strawberries, frozen
- 2 lemons, organic
- 2 packs of gelling sugar, 2:1, 500 g each

pure, very fruity, with microwave and juicer
For this version of making jelly, you’ll need a microwave and a juicer. (The juicer consists of three levels: the water container at the bottom, the juice collection insert in the middle with a drain, and the sieve insert with a lid.) To make using the juicer worthwhile, I always cook double or triple the amount, depending on how much juice is produced. First, place the frozen strawberries in a microwave dish with a lid. I pour in a 750g bag of strawberries at a time. Cook each bag for 10 minutes at 650 watts. Then pour the strawberry-juice mixture into the juicer’s sieve. Important: The pot must, of course, be closed so that the juice can flow directly into the juice collection container. Repeat the process until all the strawberries have been microwaved. Now place the juicer on the stovetop and bring the water in the bottom of the pot to a boil. Once the water is boiling, let it simmer for about another 15 minutes. Then turn off the heat and leave the pot alone. I usually let the whole thing stand until the next morning, as the juice needs to be cold before further processing. To process the strawberries, flatten them a little more in a sieve; maybe a little more juice will come out. Since you can only make two batches at a time, I first squeeze two lemons and fill the pot with juice to make 1.5 liters. Pour the juice into a large, tall saucepan and add two packets of 2:1 gelling sugar. Bring to a boil while stirring and simmer over high heat for 1 minute. Then quickly pour into clean, sealable jars and seal immediately. The jars should not be moved or knocked again until the jelly has set. I always wait until the next morning. With a bit of luck, there will be enough juice for a third batch. If it turns out that there is always just not enough juice for the third batch, I would simply use one more or one less bag of strawberries.
