Ingredients for 1 servings:

  • 500 g strawberries
  • 600 g orange(s), including 2 whole peels
  • 1 tsp lemon juice
  • 1 can coconut milk, 400 ml
  • 2 bags of gelling sugar, 2:1

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 29 minutes

makes 8 – 9 small glasses

Hull the strawberries or thaw frozen strawberries. Zest 2 oranges and segment the oranges, leaving about 600g of pulp. You’ll need 5-6 oranges, depending on the size. Add the lemon juice and coconut milk to the other ingredients and puree with a hand blender. Mix the mixture with the gelling sugar and cook according to the package instructions. Immediately fill into hot, rinsed twist-off jars and seal.
