Strawberry Pancake Cake
The perfect strawberry pancake cake recipe with a picture and simple step-by-step instructions.
For the filling:
- 400 ml Milk
- 2 tbsp Sugar
- 1 tbsp Vanilla sugar
- 1 tsp Salt
- 250 g Flour
- 2 tbsp Butter
- 100 ml Mineral water
- 200 ml Whipped cream
- 250 g Mascarpone
- 500 g Strawberries from Europe
- 100 g Powdered sugar
- Vanilla extract
- Whisk the eggs with half of the milk, sugar, vanilla sugar, butter and salt. Then gradually stir in the flour, add the rest of the milk and water, stir everything well and let the dough rest for about 30 minutes.
- Bake about 8 golden yellow pancakes from the batter in a pan.
- Let the pancakes cool down well. In the meantime, prepare the filling. To do this, whip the cream until stiff and fold it into the mascarpone. Wash the strawberries, remove the greens and cut most of them into slices. Crush 6-8 strawberries with a hand blender and stir into the cream and mascarpone mixture together with a few drops of vanilla extract. Then sift the powdered sugar, add it too and mix everything well again.
- Then can be served. To do this, alternately stack a layer of pancakes, cream / mascarpone cream and fruit on top of each other. The top layer should be made of fruit. Sift icing sugar over the cake again for decoration.
