Strawberry panna cotta

Ingredients for 4 servings:

  • 2 sheets of white gelatin
  • 1 lemon(s), organic
  • 500 g strawberries
  • 60 g powdered sugar
  • 250 g whipped cream

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 13 minutes; Total time approx. 1 day 43 minutes

Soak the gelatine in cold water according to the package instructions. Wash the lemon in hot water, dry thoroughly, and then finely grate the zest. Halve the lemon and squeeze one half. Bring the cream to a boil with the lemon zest and 50g of the icing sugar. Remove from the heat and let stand for about 10 minutes. Sieve. Squeeze out the gelatine, dissolve it, and stir it into the cream mixture. Pour into four glasses, cover, and chill overnight. Wash, hull, and slice the strawberries. Mix with the remaining 10g of icing sugar and add one or two tablespoons of the lemon juice. Let stand briefly, then drizzle over the panna cotta.
