Strawberry – Rhubarb – Kiwi Jam

Ingredients for 4 servings:

  • 400 g rhubarb
  • 400 g strawberries
  • 200 g kiwi(s)
  • 500 g gelling sugar (2:1)
  • 1 vanilla pod(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the rhubarb and strawberries, remove the green parts, and chop them finely. Peel the strings from the rhubarb. Hollow out the kiwis and chop the flesh. Place the kiwis in a large saucepan with the preserving sugar and the split vanilla pod and simmer for a few minutes. Using a hand blender, chop the kiwis slightly and check for settling (take a teaspoonful of jam; if it sets, it’s set fine). Pour the jam into prepared twist-off jars.
