Strawberry Sambucca

Ingredients for 12 servings:

  • 400 g strawberries, cleaned
  • 3 tbsp sugar
  • 1 shot of rum
  • 6 egg whites
  • 100 ml dry white wine
  • 6 sheets of gelatin

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Protein utilization – much airier than any mousse

Puree the strawberries with the sugar. Flavor with a dash of rum. Add the egg whites and beat with a mixer until the mixture has tripled in size. Heat the white wine and dissolve the soaked gelatin leaves in it. Let it cool slightly, then mix it into the Sambuk mixture with a mixer. Let it set in the refrigerator for two to three hours.
