Strawberry spinach salad

Ingredients for 4 servings:

  • 250 g strawberries
  • 300 g leaf spinach
  • 100 g pine nuts
  • 3 tbsp balsamic vinegar, dark
  • 1 tsp mustard, hot
  • 1 tsp honey
  • salt and pepper
  • 6 tbsp olive oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Roast the pine nuts without fat until golden. Let cool. Make a dressing with vinegar, salt, pepper, honey, mustard, and oil. Wash the spinach and strawberries. Rinse and halve the strawberries, and cut the spinach into thin strips. Arrange the spinach, strawberries, and pine nuts in layers on a plate and drizzle with the dressing.
