Ingredients for 4 servings:
- 4 large potatoes, floury boiling
- 4 tbsp oil
- 150 g Cheddar cheese, grated
- 3 spring onions, cut into rings
- 2 tomatoes, chopped
- 2 tbsp chili pepper(s) (jalapeno slices from the jar, well drained
- 1 tsp sweet paprika powder
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Preheat oven to 200°C. Place potatoes on a baking sheet and bake for 1 hour until tender. Then increase oven temperature to 220°C. Halve and scoop out potatoes, leaving a 3mm edge. Brush skins with oil. Return to the baking sheet and bake for another 25 minutes. Place potatoes in an ovenproof dish. Fill with half of the cheese, the spring onions, the tomatoes, and the jalapenos. Sprinkle with the remaining cheese and paprika. Bake potatoes in the oven for 5 minutes, until the cheese is melted. Tip: Jalapenos (green peppers) can be found in jars or cans in well-stocked supermarkets in the Tex-Mex ingredients section.
