Stuffed celery schnitzel

Ingredients for 4 servings:

  • 2 celery bulbs, 500g each
  • 8 slices of ham (salmon ham)
  • 4 slice(s) cheese, thin
  • 2 eggs
  • 4 tbsp flour
  • Breadcrumbs
  • Coriander, ground
  • Oil for frying
  • Salt

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Cook the celery root in boiling water for 50-60 minutes. Let cool. Then cut into evenly thick slices, about 3 cm thick. Cut each slice in half again, but do not cut all the way through. Place a slice of ham and a slice of cheese in the space between. Season the breadcrumbs with a little coriander. Coat the filled slices first in flour, then in egg, and then in breadcrumbs. Press down firmly and then fry in hot oil in a pan. Cook over moderate heat for about 3-4 minutes, until they are golden brown.
