Ingredients for 4 servings:

  • 500 g pork fillet(s)
  • 50 g ham, diced
  • 100 g mushrooms
  • 1 tbsp butter
  • 150 g cream cheese with herbs
  • 1 egg yolk
  • 3 tbsp breadcrumbs
  • ½ bunch parsley
  • ½ bunch chives
  • 1 sprig(s) rosemary, small
  • some thyme

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Preheat the oven to 200°C. Finely chop the mushrooms, fry them with the ham cubes in the butter until the liquid has evaporated, then let cool. Chop the herbs, add them to the mushroom mixture along with the other ingredients, and continue working IMMEDIATELY. Cut a pocket lengthwise into the fillets, fill with half of the mixture, and reseal. Place slit-side down in a baking dish and cover with the remaining mixture. Bake for 20-25 minutes at 200°C. Served with potato dumplings and salad.
