Ingredients for 6 servings:
- 3 large kohlrabi
- 1 tbsp lemon juice
- Sea salt
- 100 g onion(s)
- 1 small apple
- 1 tbsp oil
- 2 tbsp parsley, chopped
- 4 tbsp millet flakes
- 80 g cashew nuts, chopped
- 100 g cheese (Gouda), grated
- 1 egg(s)
- nutmeg
- Fat for the mold
- 1 tbsp parsley for sprinkling
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel and halve the kohlrabi, rub with lemon juice, and boil in salted water for 15-20 minutes. Remove and scoop out the flesh using a melon baller. Peel the onions. Quarter and core the apple. Finely dice the kohlrabi flesh, onions, and apple quarters and sauté in hot oil until translucent. Roughly chop the parsley, stir half of it into the millet flakes, and let cool slightly. Stir in the cashews, cheese, and egg. Season with nutmeg and salt. Place the kohlrabi halves in a greased baking dish and fill with the mixture. Bake in a preheated oven at 200°C on the second rack from the bottom for 15-20 minutes. Sprinkle with the remaining parsley and serve.
