Stuffed mushrooms

Ingredients for 1 servings:

  • 500 g mushrooms (approx. 15 pieces)
  • 1 tbsp Creme legere
  • 1 tbsp cream cheese up to 1% fat
  • 1 slice(s) crispbread
  • 2 tomatoes, dried (without oil)
  • salt and pepper
  • Thyme

Working time approx. 10 minutes; Total time approx. 10 minutes

Remove the stems from the mushrooms and chop some of the stems (about 5). Chop the sun-dried tomatoes, crumble the crispbread, mix with the chopped mushroom stems, the crème fraîche, and the cream cheese, season well, and stuff the mushrooms. Grill until cooked through. This serves about 15 mushrooms; the filling will expand during baking/grilling (even if it doesn’t seem like much at first, it’s enough!). All 15 mushrooms together only need 1.5 points.
