Stuffed omelet Asian style à la Gabi

Ingredients for 4 servings:

  • 5 tbsp peanut oil
  • 50 g minced meat
  • 50 g peas, frozen
  • 1 medium-sized onion(s), finely diced
  • 1 bell pepper(s), green, finely diced
  • 2 tomatoes, peeled, pitted, finely diced
  • 1 tsp sugar
  • 1 tsp fish sauce
  • 1 tsp soy sauce, dark
  • 8 m.-sized eggs
  • 2 sprigs of coriander for garnishing

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 13 minutes; Total time approx. 28 minutes

Heat 2.5 tablespoons of peanut oil in a large pan and stir-fry the ground beef for about 2 minutes. Add the peas and stir-fry for another 3 minutes. Stir in the onion, bell pepper, tomatoes, sugar, fish sauce, and soy sauce and fry for 8 minutes, until the mixture thickens. Beat the eggs and heat the remaining oil in a separate pan. Cook 4 omelets, slide them onto a plate, and spread the filling in the center. Fold the sides over to form a square. Serve garnished with cilantro.
